I am hopin santo and others can help here.

I need to know a few things though from those in the know, as I am sure many on the site will have been
If I can go big game ie marlin fishing, costs involved to would be nice, and yeah I know it will be scandolously expensive.
How much I can pick up a bottle or 3 of Gran Patrón Platinum Tequila. Do you know the customs limits too?
Costs and ease of travel if I wanted to fly to miami.
Is it better to change my money to USD or mexican peso.
I am looking at taking little luggage with me and buying a load when i get there, is it worth it?

Andy - flights from Cancun to Miami are plentiful. You can as of now get a roundtrip for under $600US after taxes, and some flights can go for a heck of a lot less. You'll just need to shop around.
As for the alcohol, the limits are set by your own country. I was able to find that you're allowed a maximum of 2 litres of still table wine, 1 litre of spirits or strong liqueurs over 22 per cent volume; or 2 litres of fortified wine*, sparkling wine or other liqueurs (*such as port or sherry), and £145 worth of all other goods including gifts and souvenirs.
Depending on how much your clothes cost, you'll need to factor that in, if you intend to declare them.

I've been to Playa Del Carmen. It's a lot less touristy than Cancun, so I really enjoyed it...BUT...your resort is probably actually miles from the town of Del Carmen. There are dozens of resorts that line the one freeway heading South from Cancun to Playa, and you have to take a taxi or the bus to get into town to actually DO anything (ie: shopping, fishing, snorkling, etc...) It was a pain in the ass getting into town.
Be aware that the taxi ride from teh airport to the resort could run about $50 US. Don;t change your money to pesos. You won't use them.
Also the resorts are totally over priced, go into town and get off the main road thorugh the center and you'll find all kinds of authentic Mexican food. You can get a 1/2 chicken, tortillas, beans, rice and a coke for about $5. It'll cost you $20 at the resort.
Also, make the trip down to Tulum. It is totally worth it. You can get a bus there and back (including park admission) for about $40.
If you want first rate snorkling or fishing, take the ferry over to Cozumel for the day. Hire you snorkling/fishing charter online AHEAD OF TIME, and you'll save at least $20-$40. If you try to hire one of the guys that attack the tourists as soon as you get off the ferry, you'll get totally gipped.
Finally, don't plan on buying your clothes there unless you want an entire wardrobe of cheesy tourist shirts with beer logos on them. There is no shopping in Playa, other than trinkets and touristy stuff.
Edit: Just looked at the google map of your resort. Looks like you are actually in the town of Playa Del Carmen, but you are svereal blocks from the beach. Expect a walk.

cool cheers for the heads up maija, yeah they have golf carts and a courtesy bus to the beach.
Yeah defo going cozumel snorkelling i did a bit of research.
We got a courtesy bus from the hotel to pick us up from the airport.
Do you think it would be worth speaking to the locals for fishing and snorkelling when we get there then booking online for the second week?

I do agree with Maija on Tulum though, i thought it was beautiful there if you like culture and history that is
