I'm going to a "delicious foods party" in a few days. Basically everybody needs to bring some homemade dish of sorts, and then we all eat our selves stupid. I need a brilliant idea though. Already on the list:
chicken curry with rice
veggies and dip
miso soup
thai iced tea
sprinkles covered (chocolate covered (caramel covered apples))
"cookies or something"
Calienta

chicken rosto!
'chicken with crisp herbs and saffron skin, stuffed with diced potato and carrot and roasted in an oven under a bed of onions '
-------------------------------------------------------
one whole chicken with skin
2 onions
1 potatoe (for chicken stuffing)
1 carrot (fro chicken stuffing)
olive oil
water
spices ( saffron, dry basil, dry oregano, salt, pepper, other spices you like)
------------------------------------------------------------------------
you'll be using the oven only for this one...
(preparing the chicken)
make sure there is no feathers here and there and also make sure the inside of the chicken is clean with no guts and broken bones, you need to seperate the skin of the chicken but leaving it on, using your fingers and starting with edge of the breast (the easiest starting place) detach the skin from the meat. the reason we are doing this is that we will coat the skin with herbs and olive not just on the skin but also inside it as well. carfeul not to tear the skin of you get a small tear here or there its okay
(the herb blend)
in a small bown mix the dry basil oregano, saffron, salt and pepper with olive oil.
(coating the chicken)
here is the messy part: start applying and rubbing the herb and saffron blend on the skin and also rub the inside as well
(stuffing)
dice the potatoes and carrots & season with salt and pepper. if you like you can add something different from the group of spices/herbs mentioned above like a little paprika for example,to give contrast and flavor for the stuffing. after that you need to cross the chicken legs and tie em up so that the stuffing doesnt spill out. i simply use a sheet of aluminum foil: simply twist and twist the foil till you have a nice foil thread which you can bend very easily and tie up the legs.
(heating the oven and preparing the onion bed)
we will slowly cook the chicken so set the oven to 160-180 c. after that bring up the chopping board and start slicing the onions. we want the chicken to be sitting on a bed of sliced onions so that the chicken's back side doesnt burn. maybe now your thinking what about the onions? wont they burn ? the answer is no and i'll tell you how....
(assembly)
in an oven tray, spread the onions and place the chicken on top, now mix up a tea cup of oil with on or two of water and drown the onions!!! the onions will cook with the oil and water will keep everything moist. place the tray in the oven, close it and forget about it for two hours! (yes. two hours) then enjoy a wonderful chicken; crispy on the outside with flesh that melts in the mouth and with lovely nice brown moist onion slices sauce (might be a little oily but what the hell! :D ).... u can put in more chicken inside the oven if its big enough, just make sure the onions spread under all of them equally and that the oil and water mix covers them.
here's one i made long ago with many other dishes

Oh man, all those sound good. I think I've decided to make a pie. The party happens to fall on steak and a blow job day as well as pi day. I was told there would be steak and blow jobs, and I think pie is a necessary element to every delicious meal especially on pi day :)
