View Full Version : JaiJai's Homeade Brocoli/Cheese Soup Recipe

I just made this today and it was YUMMMY!! : p ~~~~~
You gotta try it!

2 cups brocoli flowerettes
1/2 cup of chopped onion
1/2 cup of chopped celery
5 potatoes (peeled and diced in small pieces)
1 whole bulb of garlic or 2 teas. of minced garlic
Extra virgin olive oil
Salt, Pepper, Thyme, Smoked Paprika
1 cup of Light Velvetta (cubed)
2 or 3 slices of swiss cheese
1 can evaporated milk
1 cup of instant potato flakes
1/2 stick of butter
Approximately 8 cups of regular milk ( I use 2%)


First: Do these things separate
*Steam the brocoli and set aside (chop it up too)
*Saute' the onions and celery in a bit of olive oil
*Boil the diced potatos till done and drain


Then
*In a large pot, dump in the brocoli, potatos, onions, celery and garlic.
*Add half a stick of butter (real preferably)
*Add 1 can evaporated milk
*Stir it all up and add your salt, pepper, thyme, paprika (bout 1/2 teaspoon of each) I don't measure, I season to taste.
*Then add the regular milk to the amount of soup you want (approx 8 cups?) I didnt measure that.

*Let it get all warm but not boiling! Milk based soup shouldn't boil.
*Then add your cheeses and keep stirring to melt them in.
*I add instant potato flakes to thicken it. Stir and let it get nice and steamy hot and creamy.

EAT!! (alone or with toasted garlic bread or with crackers)

Note: I take the whole bulb of garlic, UNPEELED and drizzle with olive oil on a little pan and put in oven for about 30 -40 mins to roast it, then take it out of oven and peel it and chop it up. (roasted garlic will be sweeter with a smokey taste)
But you can use the minced garlic from a jar. Just be sure its cooked somehow before adding to the soup.

What the hell is light velvetta, evaporated milk and instant potato flakes???

lol... evaporated milk is a creamy type milk that comes in a can.. you don't have to use it, u can just stick to regular milk.

Velvetta is a paturized cheese.. I rarely ever use it except for stuff like this cuz it melts good.. You can use any type of cheese you want tho.

Instant potato flakes are just that.. comes in a box.. again, i rarely use them except to thicken soups..but some ppl use them for their mashed potatoes.

My mouth is watering! I love broccoli and onions but Ed won't eat them...I am having a hard time with the potatoe flakes....I refuse to eat them in any capacity - would flour or corn starch work instead??? Never the matter I won't get to eat it cause I'd make it for one!!!

Vix.. you could use corn starch, I only use potato flakes to keep the flavor potatoish (is that a word?) lol

You can cut the ingredients in half and make yourself a small pot!! (Y)

It's worth it! : p ~~~

when I told my hubby I was going to make a soup...he said OH boy you suck at soups..lol and it is true....but this was awsome!!something I would order at a resterant.

I will make again for the adults on my daughter's 8th B-Day party on July 7th and F8 will be able to try it then. :Bsmile:
