looking for a new baked mac and cheese recipe:P
any help?

Start by melting a generous dollop of butter in a sauce pan. Start boiling some salted water in a pot, for the noodles. Add a scoop of all purpose flour to the butter. Whisk the shit out of it so it's creamy then add a buncha milk, like 1-2 cups. Keep it on low and keep stirring till it thickens some. Start adding a shitload of shredded chedder cheese, and any other kind of cheese you fancy. I like a little bit of havarti, makes it extra creamy. By the time your cheese is melted, you should have the noodles ready too. Don't keep the sauce on for much longer or you'll curdle it, and that's gross. Start mixing that shit in a suitable dish to bake it in. The trick is to have the right ratio of sauce to noodles. Noodles are cheap, so i make sure i cook extra and throw the rest away. Then I like to spread crushed Ritz crackers on top, i use a rolling pin to crush them, but any kind of bread crumbs, w/e, will work. Bake that shit @350 for like 20 minutes, uncovered, but watch it so it doesn't bubble over, or you'll have a real mess. Enjoy!
Also, sometimes i add cooked bacon or ham or something if im feeling extra lavish. Just pat the bacon so its not super greasy.

1 8oz stick of baby swiss cheese
1 8oz stick of montarey cheese
1 8oz stick of velveeta cheese
melt in a greased pot (I use pam) adding milk to bring to a stirable consistancy
cool 1 lb of elbow noodles, drain off and put in a 13 x 9 pan, place the pan on a cookie sheet
Once cheese mixture is melted, pour over noodles
melt 1 stick of butter
crush one sleeve of ritz crackers
mix together and put on top of mac n cheese
cover with aluminum foil and bake at 375º for 45 min or until top is golden brown
enjoy :)

what about a spicy mac and cheese? hmmm that sounds good.. im gonna mix and match this weekend.. thanks folks

also, i forgot to mention it's imperitive to add some salt and pepper to the sauce, and i like a dash of nutmeg.

When John first moved here, he was very adamant that he didn't like mac n cheese.... but after eating a couple of my styles... he actually does like it now.
There's 2 types I make.. One is my grandma's old fashioned kind. It goes like this:
You just use regular macaroni (elbow kind) boil it but don't over cook it. pour it into a greased baking pan. Cut up chunks of Colby Longhorn cheese and just push them into the macaroni, all through it. Add some butter, salt and pepper, and then cover it with milk (just barely covering the pasta). Bake uncovered in a 350 oven till golden and bubbly and cooked through, I duno maybe an hour ish. That's it.

The other kind I make which is what we like best is:
I just use like Bowtie pasta or Rotini, something cute :P
I chop up some veggies and roast them in the oven drizzled with Olive oil. Such as red and green bell peppers, Onion, Garlic, Celery.. etc.
While those are roasting, I boil my pasta, till it's aldente, not squishy.
After it's done and drained, I mix the pasta and roasted veggies, add some cheeses, (sharp white cheddar, American, and for velvetta lovers u can use that too) but I try to use a couple diff kinds of cheeses and also some parmesean. Make sure it's cheesy... and add some milk as well so it's creamy.
Then I add some bacon bits, smoked paprika, salt, pepper, oregano, etc...
Toss it all together and then put into a baking dish and sprinkle the top with some parmesean cheese, then bake in the oven for a bit to blend the flavors and brown the top a bit. Maybe 30 mins. That it.

ok see i make mine how ur granny does . just with 2 eggs mixed in to hold it together better.....
and i was wondering about veggies i wasnt sure if the juice from them would over run the cheese taste or just ruin it and make it runny???.....
but now im willing to try it maybe some carrots or peppers
and swiss
and bread crumbs.
minus bacon or any other type of meat
